If you’re lucky, you may be blessed with tart, tasty rhubarb. Popular for pies, crisps, crumbles, sauces, jams and desserts, it contains a fair amount of Vitamin A, calcium and potassium. This delicious pie, containing more fruit friends, was a contest entry from Louise Davis of Dallas, TX in an American Pie contest many years ago. She did not win the contest, but it was the favorite pie of famous judge and St. Paul Pioneer Press food writer, Eleanor Ostman, who raved about it in her “Always on Sunday” cookbook!
