Well, now that the upcoming holidays are part of this 2020 horror show, I thought it might be helpful to share some recipes for our drastically reduced gatherings this year. It makes sense to roast just a turkey breast, and maybe experiment with a couple of different side dishes, appetizer or dessert.
This adapted Chicago Tribune recipe that my friend, Kris, shared is simple but tasty and elegant. But beware . . . do NOT be tempted to prepare this with the ready-to-roast, boneless, skinless, brined breast in a bag; it will be way too salty! Use your favorite stuffing, which is often the best leftover, but keep it dense and, whatever you do, don’t overcook the turkey.
