Parsnips and turnips are probably not the first vegetables you think of to serve at your traditional Thanksgiving meal. But they are truly underrated, keep well, are fiber rich and are packed with vitamins. Parsnips can be served like mashed potatoes and used in place of carrots in many recipes, with a sweet and slightly nutty flavor.
