On a corporate trip in November 1992, we were treated to dinner at the “Cypress Room” (now called the Stillwater Bar & Grill) at the Lodge at Pebble Beach in California — known for serving some of the finest French cuisine on the Monterey Peninsula. My dinner was perhaps the very best I had ever enjoyed in my life.

While shopping in Carmel, the cookbook I brought home contained some fabulous recipes from Monterey Peninsula’s best restaurants and I was thrilled this elegant entrée was included. So far, six of my successful gourmet dinner parties have featured this delicious dish over the years, and it’s time to share this adaptation with you!
