One-pan Mediterranean Shrimp

One-pan Mediterranean Shrimp, with vegetables, fruits, feta cheese and kalamata olives, as adapted from Cook’s Country.

Who doesn’t love a meal you can cook in one pan, where the flavors meld together from an endless combination of ingredients? One pan makes it simpler to feed your hungry family a deliciously nutritious dinner and the clean-up is also easier.

This wonderful version of a one-pan recipe is adapted from Cook’s Country, and features shrimp (May 9 was National Shrimp Day) and can easily be customized with different vegetables. Fresh fennel isn’t cheap — substitute less expensive fresh radishes, or large chunks of bell peppers, zucchini or summer squash, if you wish. Oh, and May 11 is National “Eat What You Want” Day, so enjoy!
